Winning recipes the whole family will love

Mealtimes in a busy household can be stressful! The kitchen is often a central hub of a home and gets used every day, which is why it’s so important to have a kitchen that it is functional and an aesthetically pleasing place to be.

Here’s some simple recipes the whole family is sure to love. These are ideal for a busy weeknight dinner or an easy treat for a weekend night in. For convenience, you can buy pre-cooked rice ready to heat in the microwave.   

Quick and Easy Sweet and Sour Chicken

This classic Chinese dish can be prepared and on the table in around 20 minutes.

Ingredients:

  • 1 small can of pineapple pieces in 100% pineapple juice
  • 1/4 cup tomato sauce
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon (packed) brown sugar
  • 1 tablespoon soy sauce
  • 1/2 medium onion diced 2.5cm pieces
  • 2 medium capsicums cut into 2.5cm pieces
  • 500g boneless and skinless chicken thighs or breasts cut into 2.5 pieces
  • 3 tablespoons corn-starch
  • 1 1/2 teaspoons salt
  • 2 cloves of garlic minced
  • 2 teaspoons of peeled and minced ginger

Step 1. To make the sweet and sour sauce, combine the juice from the tinned pineapple with the tomato sauce, vinegar, brown sugar, and soy sauce, then whisk well.

Step 2. Stir fry the chopped onion in a little bit of oil for around 1 minute then add the capsicum. Season with salt and cook for around 3-4 minutes.

Step 3. Sprinkle the corn-starch over the chicken making sure it is evenly coated.

Step 4. Add the minced ginger and minced garlic to the vegetables. Stir for around 30 seconds then remove vegetables from the heat and transfer to a plate.

Step 5. Add some oil to the pan and fry the chicken. Cook until browned on all sides.

Step 6. Return the vegetables to the pan with the chicken and then add the pineapple pieces. Stir until sauce becomes glossy, thickens, and coats the chicken.

Step 7. Heat up the rice and plate it up then serve the chicken and sauce on top. 

Home Made Beef Rissoles

Who doesn’t love a tasty rissole! These have been a favourite with my family for years.

Great for a barbecue or on sandwiches the next day

Ingredients:

  • 500 g beef mince
  • 1 onion small chopped fine
  • 2 eggs beaten
  • 2 Weetbix- yes Weetbix- crushed!
  • 1 tbs tomato sauce
  • 3 tbs barbecue sauce

      Step 1. Combine all ingredients in a bowl and mix.

      Step 2. Divide mixture into rissoles and pan fry or BBQ

Banana Pancakes

Get this sweet treat on the table in just 5 minutes!

Ingredients

All you need is 2 large eggs and 1 ripe medium size banana.

Step 1. Put the banana and eggs in a blender and blend for about 30 seconds to one minute until the mixture is very smooth.

Step 2. Lightly coat a frying pan with oil and heat. Pour the banana mixture into the pan, cook for around 1 minute, flip and cook for another minute. Serve hot. Add whipped cream and/or some chocolate chips for an extra indulgence!
